bunch of a cooking green
kale, Swiss chard, collard greens
1
bunch of an herb
3-5
cloves
of garlic
1
white onion
1
can of tomato paste
1
can of black beans
1
can of kidney beans
1
can of chickpeas
Chili powder
Black pepper
Paprika
Red pepper flakes
optional
Salt
Olive oil or vegetable oil
Instructions
Chopping and mixing ingredients
Chop the herbs and cooking green,
Add chopped ingredients and beans to a large mixing bowl
Add dry spices (chili powder, black pepper, salt, paprika, red pepper flakes) with ½ a cup of olive oil.
Mince the garlic and set aside in a separate bowl
Chop the onion into small pieces and set aside in a separate bowl
Cooking ingredients on hot plates
Heat 2 teaspoons of vegetable oil in 2 frying pans on 2 separate hot plates for 1 min,
Add half of the chopped onion to each of the pans, let cook for 2-3 mins,
Add half the minced garlic to each of the pans, let cook for 2-3 mins,
Add half of the chopped greens & beans mix to each of the pans,
Add half of a can of tomato paste and ½ cup of water to each of the pans,
Let cook for 5-10 mins until vegetables are cooked through.
Serve over rice with a salad.
Notes
If pans are too small, this can be done in multiple smaller batches.
