Add basil, arugula, garlic and lemon juice to a food processor or blender. Blend for about 10 seconds
Add olive oil and salt and blend until smooth and the oil is well incorporated (completely mixed in)
Taste the pesto and season with salt, pepper and lemon juice as needed
Mix it up! Leafy greens like kale, swiss chard, and collards can make great additions to a pesto. Also, switch up the herbs - add some Thai basil, mint or cilantro to your pesto recipes.
Notes
Arugula has been added to this pesto to give it a peppery taste! There are a lot of options with this pesto: stir it into almost any dish, spoon it on top of veggies, or even use on sandwiches as a spread!
