

Vegetarian Chili
A chili that everyone is sure to love
Ingredients
- 1 bunch of a cooking green kale, Swiss chard, collard greens
- 1 bunch of an herb
- 3-5 cloves of garlic
- 1 white onion
- 1 can of tomato paste
- 1 can of black beans
- 1 can of kidney beans
- 1 can of chickpeas
- Chili powder
- Black pepper
- Paprika
- Red pepper flakes optional
- Salt
- Olive oil or vegetable oil
Instructions
Chopping and mixing ingredients
- Chop the herbs and cooking green,
- Add chopped ingredients and beans to a large mixing bowl
- Add dry spices (chili powder, black pepper, salt, paprika, red pepper flakes) with ½ a cup of olive oil.
- Mince the garlic and set aside in a separate bowl
- Chop the onion into small pieces and set aside in a separate bowl
Cooking ingredients on hot plates
- Heat 2 teaspoons of vegetable oil in 2 frying pans on 2 separate hot plates for 1 min,
- Add half of the chopped onion to each of the pans, let cook for 2-3 mins,
- Add half the minced garlic to each of the pans, let cook for 2-3 mins,
- Add half of the chopped greens & beans mix to each of the pans,
- Add half of a can of tomato paste and ½ cup of water to each of the pans,
- Let cook for 5-10 mins until vegetables are cooked through.
- Serve over rice with a salad.
Notes
If pans are too small, this can be done in multiple smaller batches.
