Vegetarian Chili

A chili that everyone is sure to love

Ingredients
  

  • 1 bunch of a cooking green kale, Swiss chard, collard greens
  • 1 bunch of an herb
  • 3-5 cloves of garlic
  • 1 white onion
  • 1 can of tomato paste
  • 1 can of black beans
  • 1 can of kidney beans
  • 1 can of chickpeas
  • Chili powder
  • Black pepper
  • Paprika
  • Red pepper flakes optional
  • Salt
  • Olive oil or vegetable oil

Instructions
 

Chopping and mixing ingredients

  • Chop the herbs and cooking green,
  • Add chopped ingredients and beans to a large mixing bowl
  • Add dry spices (chili powder, black pepper, salt, paprika, red pepper flakes) with ½ a cup of olive oil.
  • Mince the garlic and set aside in a separate bowl
  • Chop the onion into small pieces and set aside in a separate bowl

Cooking ingredients on hot plates

  • Heat 2 teaspoons of vegetable oil in 2 frying pans on 2 separate hot plates for 1 min,
  • Add half of the chopped onion to each of the pans, let cook for 2-3 mins,
  • Add half the minced garlic to each of the pans, let cook for 2-3 mins,
  • Add half of the chopped greens & beans mix to each of the pans,
  • Add half of a can of tomato paste and ½ cup of water to each of the pans,
  • Let cook for 5-10 mins until vegetables are cooked through.
  • Serve over rice with a salad.

Notes

If pans are too small, this can be done in multiple smaller batches.
