Arugula Basil Pesto

A traditional Italian paste with a twist

Ingredients
  

  • 4 cups Arugula
  • 1/3 cup Parmesan Cheese
  • 4 cups Basil
  • 2 tbsp Lemon Juice
  • 1/4 cup Olive Oil
  • 2-3 tbsp Sunflower Seeds
  • 2-3 Garlic Cloves
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Add basil, arugula, garlic and lemon juice to a food processor or blender. Blend for about 10 seconds
  • Add olive oil and salt and blend until smooth and the oil is well incorporated (completely mixed in)
  • Taste the pesto and season with salt, pepper and lemon juice as needed
  • Mix it up! Leafy greens like kale, swiss chard, and collards can make great additions to a pesto. Also, switch up the herbs - add some Thai basil, mint or cilantro to your pesto recipes.

Notes

Arugula has been added to this pesto to give it a peppery taste! There are a lot of options with this pesto: stir it into almost any dish, spoon it on top of veggies, or even use on sandwiches as a spread!
