
Arugula Basil Pesto
A traditional Italian paste with a twist
Ingredients
- 4 cups Arugula
- 1/3 cup Parmesan Cheese
- 4 cups Basil
- 2 tbsp Lemon Juice
- 1/4 cup Olive Oil
- 2-3 tbsp Sunflower Seeds
- 2-3 Garlic Cloves
- Salt to taste
- Pepper to taste
Instructions
- Add basil, arugula, garlic and lemon juice to a food processor or blender. Blend for about 10 seconds
- Add olive oil and salt and blend until smooth and the oil is well incorporated (completely mixed in)
- Taste the pesto and season with salt, pepper and lemon juice as needed
- Mix it up! Leafy greens like kale, swiss chard, and collards can make great additions to a pesto. Also, switch up the herbs - add some Thai basil, mint or cilantro to your pesto recipes.
Notes
Arugula has been added to this pesto to give it a peppery taste! There are a lot of options with this pesto: stir it into almost any dish, spoon it on top of veggies, or even use on sandwiches as a spread!
